I can’t overstate how good these baked oats are – it’s like having dessert for breakfast but comes together very easily and is pretty well balanced, served with a big dollop of Greek yoghurt. 

Ingredients

4 medium eating apples
120g oats
2 tbsp mixed chopped nuts of choice
2 tbsp almond butter
2 tbsp maple syrup (add more or less to taste)
1 tsp cinnamon

Recipe

  1. Preheat the oven to 190c fan
  2. Place the apples in a small baking tray (roughly 15x20cm) make sure that the base is very well covered but there is enough space to add the topping. Mix the apples with half the cinnamon and maple
  3. Mix together all other ingredients in a bowl. Stir in water, little by little until a loose paste is formed. Spread this evenly over the apples
  4. Make until golden and bubbling – around 20 mins and serve with yoghurt, a little pinch of cinnamon, and more maple or honey, if you like
