Carrot ribbon salad with a creamy kefir dressing

Quick, simple & delicious.

Ingredients

Makes 2 portions
3 large carrots, peeled
250g cooked lentils
Juice of half a lemon
3 tbsp kefir
1 tbsp tahini
Olive oil
70g feta, crumbled
Half a small shallot, finely diced
Salt and pepper
A handful of herbs, washed and chopped, plus extra to garnish (carrot tops, dill, parsley, mint, coriander or a mix)

Recipe

1. Use a peeler to make carrot ribbons and place in plenty of ice water for a few mins to get crisp and curly, then drain
2. Mix the kefir, lemon juice, tahini, salt and pepper & herbs to make the dressing
3. Mix together the lentils, carrots, dressing and shallots
4. Plate up the salad, drizzle with olive oil, top with more feta and herbs
