One-pan spinach lasagne

An absolute midweek hero / dinner party saviour using frozen spinach that can be in the oven in no time.

Ingredients

Makes 5-6 portions
300g fresh lasagne sheets
450g frozen spinach
3 tbsp flour
3 tbsp butter
1.2l milk
100g grated Parmesan
250g ricotta
2-3 shallots sliced
3 cloves garlic, sliced
Toasted pine nuts to garnish
Nutmeg to taste
Salt & pepper

Recipe

1. In a wide, oven proof pan sweat the shallots and garlic in the butter until softened. Stir in the flour, cooking out over a medium heat for 3-4 mins while stirring. Stir in the milk little by little, waiting for it to be incorporated before continuing. Stir in the frozen spinach. When melted blitz for a minute or so with a hand blender to break down the spinach a little. Keep stirring over a medium heat until the sauce is thick. Stir in the nutmeg and season to taste
2. Scoop out three quarters of the spinach sauce from the pan and set aside in a bowl. Make layers in the pan starting with the spinach sauce at the bottom, then ricotta, Parmesan, lasagne sheets and so on until the pan is nearly full and the spinach sauce has all been used
3. Bake in a preheated oven at 200c fan for 25-35mins
