Ingredients
Makes 2 portions
3-4 medium potatoes, washed and cut roughly into 2cm pieces
1 lemon
100g cooked green lentils
Half a lemon
A good pinch of dried oregano
A good handful of cavolo nero, pulled from the stalk
3/4 radishes washed and finely sliced
A handful of radicchio leaves, washed
A few slices of red onion
70g feta, crumbled
Olive oil
Salt & pepper
Recipe
1. Mix the potatoes with olive oil, oregano, salt on a non-stick baking sheet. Cook at 190c for 30-40mins until golden and tender
2. Cook the cavolo nero – boil for a couple of minutes and drain
3. Mix all other ingredients together
