A top tier salad for sunny winter days.
Ingredients
Makes 3 portions
1 head of broccoli, cut into florets
1 head of radicchio, cut into leaves and washed
Half a lemon
1 ball buffalo mozzarella, torn
A good handful of sourdough, torn into chunks roughly 2x2cm
A few sprigs thyme
1 tsp fennel seeds
1 tsp chilli flakes
Olive oil
Salt & pepper
Recipe
1. Preheat the oven to 185c. Mix together on a tray the broccoli, bread, thyme, chilli, fennel seeds, oil, salt and pepper. Roast until the broccoli is tender and croutons turning golden
2. Mix the broccoli and croutons together with the leaves & lemon juice, season to taste and top with the mozzarella
