A winter’s day of easygoing veggie favourites. I hope these provide a little inspo for fuss-free, realistic meals as well as more in depth showstoppers. 

Nothing beats a tomato toast for a quick and delicious meal, at any time of day. Good extra virgin olive oil and flaky sea salt are non negotiable. Ricotta works so well here and adds some protein. I love using winter tomatoes at this time of year – these black Iberiko tomatoes are from Natoora. This variety thrives in colder weather and has a really lovely and delicate mineral flavour.

A really nourishing plate of food. There’s so much depth of flavour in the grains. Anisey fennel and a marmeladey bitterness from the whole diced lemon.
