Crunchy and fresh, this Waldorf-inspired salad has so much freshness and crunch, with a zippy creme fraiche dressing.

Ingredients
Makes 3-4 portions
3 sticks celery, washed and finely sliced at a slight angle
A few celery leaves, washed (if you have them)
1 good eating apple like pink lady, finely sliced
2 tbsp creme fraiche
1 tbsp extra virgin olive oil, plus more as needed
1 tbsp white wine vinegar
3 pitted dates, finely chopped
2 good handfuls of washed radicchio salad leaves
1 heaped tbsp toasted sunflower seeds
Salt & pepper

Recipe
- In a large bowl mix together the creme fraiche, olive oil, vinegar, salt & pepper. Stir in the celery
- Add the apples and salad leaves to the bowl and muddle them in very gently – the don’t need to be completely coated. Drizzle over a little more olive oil as needed and place in a bowl
- Top with the dates and seeds
