Blood orange, feta & and walnut toast

A great snack or light meal. The sharp brightness of the citrus pairs perfectly with the bitter leaves and salty cheese, wonderfully tempered by a simple honey dressing.

Ingredients

Makes 1 portion
1 blood orange, peeled, and cut into thin semi circles with any seeds removed
A small handful of watercress and radicchio, washed
1 tsp honey
Salt & pepper
Olive oil
Crumbled feta
1 tbsp toasted chopped walnuts

Recipe

1. Toast your bread
2. Mix together the orange, feta, salad leaves, olive oil, honey, salt & pepper and pile onto the toast
3. Top with the walnuts, and extra feta
