Just such a speedy and delicious bowl.
Ingredients
Makes 2 portions
300g mushrooms of choice, washed, any larger pieces broken down
350g butter beans, thoroughly washed and patted dry with a cloth
A good handful of cavolo nero, pulled from stalk
1 tbsp parsley
Few sprigs of thyme
Half a lemon
Parm to taste
Salt & pepper
Olive oil
Recipe
1. Place a large, non-stick frying pan over a high heat with a little oil. When hot add the beans. Stir occasionally until evenly coloured all over
2. Meanwhile sweat the mushrooms with butter & thyme until gently golden
3. Cover the cavolo in a bowl or pan with boiled water for 2-3 mins, then drain
4. Add the mushrooms, cavolo, parsley & lemon to the bean pan. Warm together, season to taste, stir in the parm, then serve
