French onion beans on toast

I can’t think of anything I’d rather eat – a tip top winter warmer.

Ingredients

Makes 3 portions
1 large white onion, thinly sliced
1-2 cloves garlic, thinly sliced
1 jar 600g butter beans
Olive oil
150g grated Gruyère or cheese of choice
50ml white wine (or 1 tbsp white wine vinegar)
A few sprigs of thyme, picked and washed
1 cup of hot veg stock
1 tsp marmite/ yeast extract mixed into the veg stock
3 thick cut slices of bread
Olive oil
Butter
Salt & pepper

Recipe

1. In a wide pan sweat the onion over a low heat with a little butter and oil. Keep stirring regularly until the onions are gently caramelised – if they catch/ start to burn stir in a little water and keep going. Stir in the garlic and thyme in final few minutes of cooking until the garlic turns a gentle golden
2. Add the wine to the onions, keep cooking until the pan is nearly dry. Then add the veg stock and beans. Increase the heat to medium and cook out until the beans are very creamy and the sauce is very thick
3. Meanwhile preheat the oven grill/ broiler to high. Toast the bread on one side, place the toasted side down, cover the untoasted side with Gruyère and place under the grill until melted. Top with the beans and more cheese, then place back under the grill until melted
