The most refreshing and simple light sunny day salad. Ideal for making the most of tomato and stone fruit season, when summer produce is at its very best.
Recipe
Makes 2 portions
2 heaped tbsp labneh
2 medium-large tomatoes, washed and sliced or wedged
1 peach, washed and wedged
1 small cucumber (or about a third of a regular one) washed and sliced at a slight angle
1 tbsp washed chopped mint leaves
Toasted black sesame seeds
Salt & pepper
For the dressing:
Half a shallot diced
1 tsp honey or molasses
1 tbsp white wine vinegar
1 tbsp evoo
- Stir together dressing ingredients
- Spoon the labneh or yoghurt onto a serving plate and top with the tomatoes, peach and cucumber
- Drizzle over the dressing, salt & pepper. Scatter over the mint and sesame
Looking for substitutions?
- To keep it vegan use plain coconut yoghurt mixed with a pinch of salt
- Swap the labneh for thick Greek yoghurt mixed with a pinch of salt
- Swap the shallot for red onion
- Sub the peach for any other ripe stone fruit
- Use white sesame, or any other nut or seed you prefer – flaked almonds or pistachios work well
