So simple, fresh and delicious. Mint and feta is a combination you can’t argue with – and it works so well with lovely sweet peas. Best enjoyed on sunny spring days. I have resisted the urge to call this pea-za.
iNGREDIENTS
Makes 2 large flatbreads
2 balls fresh pizza dough
150g peas, fresh or frozen
150g feta cheese, plus a little extra to garnish
a big handful of pea shoots, washed
10g mint leaves, washed
A little flour for rolling
Extra virgin olive oil

Swap the feta for goat’s cheese
Sub rocket or baby leaves for the pea shoots
RECIPE
- Bring a large pan of water to a rolling ball. Add the peas, cook until just tender (2-5 mins depending on size) and drain (keep a few aside to garnish)
- Blend the peas, mint and feta (keep a little aside to garnish) with a drizzle of oil in a food processor until fairly smooth
- Roll the pizza dough out on a floured surface to a round or oval shape. Grill on both sides in a pan or barbecue until golden and puffy
- Spread the pea mixture over the top, add more peas, feta, pea shoots and a good drizzle of olive oil to serve
