Gnocchi with roast cherry tomatoes, basil & burrata

An ideal simple, summery dish.

Ingredients

Makes 2 portions
300g gnocchi
200g cherry tomatoes
Few sprigs thyme
1 bunch basil, washed
1 ball burrata
2 tbsp toasted pine nuts
Olive oil
Salt

Recipe

1. Place the tomatoes on a roasting tray with oil, salt & thyme. Cook in preheated oven at 190c fan until bursting (about 15 mins)
2. Bring a large pan of salted water to a rolling boil. Add the gnocchi, cook until it floats to the surface and drain. Colour the gnocchi on both sides in a non stick pan with a little oil and thyme
3. Blend the pine nuts, basil (keep some of both back for garnish), with a tbsp olive oil and pinch of salt until smooth
4. Plate up the gnocchi, tomatoes, basil leaves and top with the burrata, basil dressing and pine nuts

A really nourishing plate of food. There’s so much depth of flavour in the grains. Anisey fennel and a marmeladey bitterness from the whole diced lemon.
