A really delicious day of winter comforts and easygoing everyday meals. A beetroot feta toastie made for the lunch of my dreams, a colourful rhubarb pud to combat the grey skies and a simple, nourishing bowl of fennel beans.
BREAKFAST

APPLE CINNAMON YOGHURT BOWL
A very quick, delicious and easy way to start to the day. Apples are my go-to when there is a dearth of seasonal fruits around during the winter. Packed with fibre, protein and healthy fats – a very satisfying way to start the day. Here I used Greek yoghurt and topped it with with chopped apples, almond butter, chopped prunes, ground cinnamon, sunflower seeds, ground flax and honey.
LUNCH
Beetroot & feta toastie
My ideal variation on a grilled cheese. The combination of earthy beets, fragrant thyme, sharp feta and sweet honey just makes total sense. Use pre-cooked beetroots for a very speedy snack or meal.
