Fennel, olive & white beans
Beautifully caramelised fennel on a bed of yielding creamy white beans. A really simple meal to put together, but such a showstopper. I like to add fennel seeds to the bean base to really amplify the anisey flavour throughout.

Pan fried cauliflower with an olive, caper & lemon dressing
1. Colour the cauliflower in a wide pan over a medium heat with a little oil. Turn when golden on the underside, add a good knob of butter, salt & thyme. Keep cooking until the cauliflower is tender, then lift the cauliflower out onto a plate
